awful, so awful at this…. & Paleo Chocolate-Chocolate Chip with Toasted Coconut Ice Cream

Ok i know i’m the worst blogger ( can i even refer to myself as such) of all time! but never mind that, i have something so very exciting;

Paleo Chocolate-Chocolate Chip Ice Cream with Toasted Coconut
very Long title yes. but so very good and worth the brain power needed to comprehend that much chocolate in one sentence.
ok here it is
1 can full fat coconut milk
1/2 cup Pure Maple Syrup *
3 Egg Yolks
1/2 cup unsweetened Cocoa Powder
1/2 bag or so of Enjoy Life Mini Chocolate Chips
1/3 cup Unsweetened Toasted Coconut Flakes

I put all ingreadients but the last two in a sacue pan and brought to a boil while whisking then i allowed the mix to cook and then refridgerated for 2 hours. Next turned on my icecream maker and poured ingredients in, about the last 5 min of the machine doing it’s thing, i poured in my chocolate chips and my toasted coconut. then i poured it into freezer safe dish and put in freezer for about an hour to harden a little. IT WAS DELISH!
* you could add more maple syrup, i just prefer a less sweeter ice cream

Tabata & Skipping

Skipping: Since I am no longer able to run (for the time being) and since I need to have cardio…I NEED cardio, I had to think of what I could do that would be lower-impact than running but still get my sweat on. I came across the idea of skipping on the bodyrock.tv app, (don’t have it? get it!), I never thought to apply tabata to skipping but after reading a friends post I decided to give it a go…

so here’s a simple tabata routine I did, I usually do 10-12 min.

set my gymboss timer to 10sec rest and 50 sec on, and go!

I think the next time I do this i will try to do 10sec rest and 1.30min on, because I love to torture myself!

the most important piece of fitness equipment you can get the gymboss timer; this little thing has completely changed my workouts and is like having a personal trainer beside you.  amazing, and you don’t even have to buy the little gadget, you can download the app for FREE! check it out! This does not mean it is my favourite, I have way too many….my ultimate sandbag, my equalizer bars, pink ofcourse! I love them all but my workouts wouldn’t be nearly as difficult if it weren’t for my little gymboss, whom I LOVE so much!

Spirializer Spiraling

Ok so I bought this amazing and beautiful gadget last week while downtown with husband. Is it necessary, well….absolutely it is, No it’s not…but it sure makes veggies pretty and fun! Putting the veggies through the spiraler was so satisfying. It’s a wonderful thing when you can look at your vegetables and think they are the prettiest things you have ever seen. So my gadget is The Paderno World Cuisine Spiralizer, I just love it! We made the dish below as well as some apple chips that baby Iz and I loved!

Peanut Honey Lime Dressing with modified ingredients made by moi 🙂

  • 1/2 Tbsp honey
  • 1/2 cup natural peanut butter
  • Juice of 2 limes
  • 2 Tbsp red chilli flakes
  • 2 tsp tamari
  • 2 tsp garlic powder
  • Zest of one lime
  • 2 tbsp sesame oil
  • 1 cup almond milk unsweetened original
  • 1/2 cup water

I mixed all this together and put in pot on stove top on low and simmered, when the liquid reduced I served it over chicken i lightly grilled on BBQ which was on top of the gorgeous veggies I spiraled!

today I will be doing anotherbodyrock.tv workout, I usually add intervals of skipping so my workout will look like this:

I set my gymboss timer for 10 sec rest and 50 sec on & 24 rnds if I’m not feeling eager, otherwise I’ll be doing this baby 2x’s through because I LOVE to feel the burn and to sweat my butt off 🙂
