Whole 30 *gulp

Well Day 1 is pretty much over. I managed to get by with no nut butters *gasp which is a huge accomplishment seeing as I look forward to my tbsp of almond butter every morning over my fruit and coconut milk. My nut butters are what I’m working on for this whole 30 since I already am a pretty clean paleo eater. Anyways, all in all a great day. We will see what the next few days bring…especially once I start craving chocolate and am not allowed to just make my own chocolate snack 😁I’m nervous just thinking about it

Paleo Sweet Potato Bread

Today’s workout is an oldie from bodyrock, this past week I have found myself doing more bodyrock.tv workouts. Lately I have been making my own but this week, don’t feel like mine
Today workout is Pumped Up Kicks
And this is how I did it, I like to change up the layout of workouts ALOT!
50/10
1. Skip
2. Skip
3. Frog jump + 2 push-ups
I repeated that again then moved ok to next exercise in the workout which is
1. skip
2. skip
3. Clean & Press + Squat & Press did that two times through and moved on. After I completed all 24rnds I then did it straight through with no skipping for 6 rnds (each workout one time through). This totals 30 rnds plus I did 12 min abs 😘
And let me just say, back to back weighted jump lunges SUCK!
So while that is just thrilling everyone to bits, I do have an amazing recipe to share ….
Sweet Potato Bread this is from PrimalLife on Instagram or her blog HERE
-4 eggs
-1.5 cup coconut flour (I only had 1 cup so I upped my almond flour by 1/2 cup)
-.5 cup almond flour (I did 1 cup)
– 1 tsp baking soda (I had none 😁)
-1 tsp baking powder (gluten free)
-couple pinches of Pink Himalayan Sea Salt
– 1-2 tbsp cinnamon
– 3 cups sweet potatoes mashed

I cut 3 medium sweet potatoes in half and placed cut side down on baking dish which I first covered in parchment paper. I then mixed dry ingredients together. Once the sweet potatoes were cooked, I removed skin and mashed the potatoes and added to the dry ingredients and added the eggs that I had whisked which I am only mentioning now 😉because I forgot to mention them earlier. Next I pressed into a parchment-lined loaf pan and put in oven at 375 deg.for about 45 min.
I threw in some raisins and pumpkin pie spice and a little more cinnamon 🙂
I’m enjoying some now with an egg and coconut butter on top as my post workout meal

awful, so awful at this…. & Paleo Chocolate-Chocolate Chip with Toasted Coconut Ice Cream

Ok i know i’m the worst blogger ( can i even refer to myself as such) of all time! but never mind that, i have something so very exciting;

Paleo Chocolate-Chocolate Chip Ice Cream with Toasted Coconut
very Long title yes. but so very good and worth the brain power needed to comprehend that much chocolate in one sentence.
ok here it is
1 can full fat coconut milk
1/2 cup Pure Maple Syrup *
3 Egg Yolks
1/2 cup unsweetened Cocoa Powder
1/2 bag or so of Enjoy Life Mini Chocolate Chips
1/3 cup Unsweetened Toasted Coconut Flakes

I put all ingreadients but the last two in a sacue pan and brought to a boil while whisking then i allowed the mix to cook and then refridgerated for 2 hours. Next turned on my icecream maker and poured ingredients in, about the last 5 min of the machine doing it’s thing, i poured in my chocolate chips and my toasted coconut. then i poured it into freezer safe dish and put in freezer for about an hour to harden a little. IT WAS DELISH!
* you could add more maple syrup, i just prefer a less sweeter ice cream

Paleo Pumpkin Pie

Ok here’s the pumpkin recipe I mentioned earlier….yum! I would not add baking soda to the crust mix and I would not add as much coconut oil in the crust either. I would just get the walnuts ground up and add small amount of coconut oil to it.

todays workout

ok so today i did “hot body on me” workout from bodyrock.tv,I did this as a warmup and my set was 50/10 for 12 rnds

Next i went on to do my own burpee challenge; it went like this

every 3 min (i had my gym boss timer set to go off every 3 minutes) and no matter where i was in the following workout, i would perform 15 burpees with tricep pushups. for ex. if i was at 33 out of the 50 pushups i was doing, i would stop at 33 when the beeper buzzed and then do 15 burpee/tricep pushups, then when completed, i would hit “start” on timer again for another 3min and continue on with my pushups and go down my list. so the list is…

1. 50 squats with sumo leg lifts (sandbag)

2. 50 standard pushups

3.50 switch lunges (25 each side)

4.100 crab dance

5.150 mountain climbers

6.50 side to side bicycle abs with the Ugi ball

7.25 Dive Bombers (hard as hell)

8. 100 squats with leg lift on chair (50 each leg)

that brought me to 32.23 min. i ended up completing 6 rnds of the burpees and was dripping sweat like you wouldn’t believe. and just because I LOVE to torture myself; I had myself skip to the nearest 10min. so I finished at 32 min so i had to skip for 8min (i did interval skipping, 55 sec on, 5 sec rest). this workout was fantastic, I was certainly DONE when I heard the final beep. LOVE/HATE this workout but it was great, so if you want a challenge, try it out and post your times; I LOVE to see how others to compare and beat see how I can better my times 🙂

Ok what we have here….

Ok so this is a little gem, reminds me of French toast with berries, I bet if you were to not scramble this and just fry it, you would have a pancake/French toast-like thing happening. I will most certainly be trying that maybe tomorrow for my pre-workout breakfast.

This is delicious and filling. Here’s what I did:

-1 egg plus some egg whites(we go through alot of eggs so I add the whites to make them go further)
-1/2 banana
-1/4c coconut milk. Find one with no other ingredients
-cinnamon
-tsp Coconut oil for frying
Mix and mash together and fry ‘er up! Topped with unsweetened coconut flakes, and berries and some banana and a 1/2 tbsp of homemade raw almond butter! HEAVEN!

Home made….Almond butter

Ok so homemade almond butter; holy hell this has opened the door for an insane amount of possibilities! Can we say butter blends, can we saw raw cocoa almond butter or macadamia butter with cashews, roasted almonds, roasted any nut…..
All that’s needed:
1. kick-a$$ blender like the vitamix (heaven!) my favorites appliance in the kitchen!

2. Almonds

3. Patience. I’m not good with this but it’s required and the end product is beautiful….so I kept going. From dust to this magical cream that formed after minutes of scraping and rescraping…and minutes more and then finally…..magic.

My Paleo take on Huevos Rancheros

Ok it’s been a while. Tons upon tons I should mention BUT I won’t. Want to know what I have been doing for hours at a time; Paleo. Google it, read every book about it like I have, listen to podcasts while going through hundreds of blogs like I have 🙂 I think it says something when CrossFit enthusiasts, quite arguably the worlds toughest workout, are also Paleo enthusiasts!

Today I bring you a recipe that is paleo friendly!

-Ground chicken or turkey or anything ground and lean
-green pepper diced
-1/2 tomato or more, diced
-cilantro to liking
-roasted jalapeño pepper *
-homemade taco seasoning

Fried meat up in some coconut oil, then added Ingredients

To roast jalapeño I just just through the pepper on my gas stove, otherwise BBQ or oven!

Then when it was nice and black on all sides, I ran it under water and scraped off black burnt skin

Then I added the jalapeño to the mix and let that cook for a bit. Next I frayed half a sweet potato and half a zucchini together…..
Scratch that; I’m outta zucchini so just a sweet potato

Once that’s all cooked to my liking I will add it to the meat mix of heaven, then I will fry up some eggs…
While we are waiting for that to cook, paleo info I would insist that you read Robb Wolf, he is an incredible writer and (I think) the most knowledgable person on the subject, he has lots of scientific info for all you info nuts like me and his writing is hilarious.

I’m terrible at this blog business….

Ok here is today’s workout, about to start….

After each 4 rnds (12 in total) of “one direction workout“, I’m going to do 4 rnds of skipping so 4 min skipping. It’s going to be about 42 min long with both workouts, lately I’ve been doing an hour + so I just might do some skipping intervals throughout my first workout “girls on top” haha. The names of these. Ok. Here I go.

Breakfast

I am enjoying my delicious breakfast of oats, almond milk, buckwheat groats, flax seed, blueberries, raspberries, cinnamon, hemp hearts, and a tbsp of natural pb. This is probably the first time in well over a year I’m having something other than yogurt for breakfast, but this meal will give me all the energy I need for my workout in an hour
