Spirializer Spiraling

Ok so I bought this amazing and beautiful gadget last week while downtown with husband. Is it necessary, well….absolutely it is, No it’s not…but it sure makes veggies pretty and fun! Putting the veggies through the spiraler was so satisfying. It’s a wonderful thing when you can look at your vegetables and think they are the prettiest things you have ever seen. So my gadget is The Paderno World Cuisine Spiralizer, I just love it! We made the dish below as well as some apple chips that baby Iz and I loved!

Peanut Honey Lime Dressing with modified ingredients made by moi 🙂

  • 1/2 Tbsp honey
  • 1/2 cup natural peanut butter
  • Juice of 2 limes
  • 2 Tbsp red chilli flakes
  • 2 tsp tamari
  • 2 tsp garlic powder
  • Zest of one lime
  • 2 tbsp sesame oil
  • 1 cup almond milk unsweetened original
  • 1/2 cup water

I mixed all this together and put in pot on stove top on low and simmered, when the liquid reduced I served it over chicken i lightly grilled on BBQ which was on top of the gorgeous veggies I spiraled!

Delicious Black Bean Burritos

these are AMAZING and a staple in our house

Black Bean Burritos 

Ingredients:

  • 2 cloves garlic minced
  • 1 onion (i use whichever i have on hand) diced
  • 1 tbsp coconut oil (has higher smoke temp than other oils)
  • 2 cans drained & rinsed Black Beans
  • 1 can diced tomatoes, drained
  • 1/4 c corn frozen
  • cilantro, adjust to your preference
  • 1 can Alymer Accents spicy red pepper
  • 1 cup water
  • tortilla wraps, I love Josephs low carb wraps
  • 1 baby-bell light cheese or a cube of part-skim mozzarella

Directions :

1. heat coconut oil on med. heat in pot, add garlic & onion, sauté until onion is translucent making sure the garlic is not burned.

2. add black beans

3. add 1 cup water and simmer until soft and reduced

4. use a hand-blender or a super fantastic mixer like the Vita-mix and blend what’s in pot.

5. back in pot and add diced tomatoes and Alymer accents, corn and cilantro and stir together

6.scoop on your flatbread and put in oven with park-skim or light babybell cheese cut up overtop. YUM!
